The Caribbean Red Snapper Ingredients

2 tbsp. of olive oil
1 medium onion, chopped
1 large tomato, chopped
½ cup red pepper, chopped
½ cup carrots, cut into strips
1 clove garlic, minced
2 tbsp. pitted ripe olives, chopped
2 tbsp. crumbled low-fat feta or low-fat ricotta cheese
½ cup dry white wine
¾ pound red snapper fillet

The Steps In Cooking

Heat your olive oil in a large skillet at over medium heat. Sauté the mixture of onion, carrots, red pepper, and garlic for ten minutes. Pour some wine in the mixture and let it boil. At one side of the pan, add your vegetables. Arrange the red snapper fillets in a layer at the center of the skillet and cover it for five minutes until it gets cooked. Add the tomato and olives afterwards and the cheese after two minutes. For three minutes, let the fish cook until it is firm and moist. Finally, transfer the finished dish and serve it by garnishing it with vegetables and pan juices.
